A tandoor is the traditional clay oven found all over India but particularly the Punjab. Tikka is a variation on the Hindi word that means spicy, chilli hot, pungent with onion, ginger and garlic, hot and roasted.
Chicken Jalfrezi is an Indian curry dish believed to originate from the Bengal province. The cooking method is more stir fry than curry and is thought to have been brought to India by the Chinese, but it is quite low in calories
The name comes from the dish the food is in. Balti literally means bucket but it is actually a small iron wok. The recipe appears to have originated in Birmingham in the early 1970s!
